Hash Brown Quiche

24 ounces frozen shredded hash browns
1/2 cup butter, melted

2 cups grated cheddar cheese
2 cups of ham (you could use sausage, bacon or vegetable of your choosing)
(I would add cooked onions or chives next time)

6 eggs, beaten
2 cups milk
1 teaspoon mustard powder
1/2 teaspoon salt (I would probably up to 1 teaspoon)
1/2 teaspoon pepper

Place frozen hash browns in a 9x13 baking dish coated with cooking spray. Pour melted butter over hash browns and bake at 400º for 30 minutes.

Top hash browns with cheese and ham.

Mix egg, milk, salt and pepper together. Pour egg and milk mixture over cheese topping and return to oven for 30 minutes at 350º.

    Great recipe! I do agree with adding cooked onions or chives, it needs that extra flavor! I found that it needed to cook a little longer than 30 minutes after adding the eggs but that could have just been my oven! Thanks for the awesome recipe...it was a hit!

    To the basic recipe I added:

    1) chives (I chopped and precooked
    the chives in a small skillet
    with a few bacon
    crumbles).

    2) added more ham (bought packaged
    sliced ham, cut into 1/2"
    pieces, used about 12 oz.)

    3) also added bacon crumbles
    about 4 - 6 oz) (bought the
    packaged precooked bacon
    crumbles, Costco has a bag of
    bacon crumbles that work well).

    4) tomatoes; (used Roma Tomatoes
    sliced thinly, but I think
    fresh local tomatoes would be
    great. Roma tomatoes have
    advantage of being small so no
    problem with serving size).

    5) I used 8 eggs instead of 6,
    and increased the cooking time.

    6) With the hash browns
    I "cheated" and bought a
    (frozen) bag of "Southwestern"
    (peppers and onions already in
    the hashbrowns). I used about
    26 - 28oz. of that.

    I did not add the mustard powder, but did use some add'l seasoning salt. (used about 1/4 teaspoon
    of regular salt and 1/4 teaspoon of seasoned salt, alter to taste).

    and,
    I added about 8 minutes to the cooking time for the hashbrowns (total 38 minutes);

    I placed the tomatoes on top of the ham and bacon crumbles, and then placed the cheese on top
    of the tomatoes, then poured the egg and milk mixture over the top of everything.

    I added an additional 10 minutes to the cooking time for second "section" (add'l eggs, tomatoes, etc.).
    (total 40 minutes, but may need to check and add or subtract a few depeneding upon your oven).

    Overall cooking time, about 1 hour, 10 minutes.
    Can prep the hashbrowns and butter while the oven is preheating, and can easily do the rest of the prep
    while hashbrowns are cooking.

    9 x 13 casserole dish.

    ..makes it into a full meal, and
    more "attactive" to guys.
