Caesar Dressing

Source: Moosewood Restaurant Simple Suppers

Yield: 1/2 cup

2 tablespoons red wine vinegar or cider vinegar
2 tablespoons mayonnaise
1/2 teaspoon Dijon mustard
1 teaspoon soy sauce or Worcestershire sauce
1/4 cup grated Parmesan or Pecorino Romano cheese
1/2 teaspoon salt (I cut to 1/4 teaspoon)
pinch of black pepper
1/2 cup olive oil (I cut to 1/4 cup)

Whisk together all of the ingredients. Store leftovers in the refrigerator for up to one week.

This recipe goes with Caesar Salad with Tofu Croutons.
