Peanut Butter Cup Brownies
Source: based on New Classic Brownie
8 tbsp unsalted butter (1/2 cup)
4 oz unsweetened chocolate
1 1/4 cups sugar
1 tsp vanilla extract
1 tablespoon cocoa powder
1/2 teaspoon baking powder
1/4 tsp salt
2 eggs
3/4 cup all purpose flour
Preheat the oven to 375º.
Melt the butter and the chocolate together, on top of a double boiler or in the microwave, stirring often until smooth. Stir in sugar, vanilla cocoa powder, baking powder and salt. Add eggs one at a time, followed by flour. Stir until very smooth, about 1 minute.
Roll dough into approximately 1-inch balls and place in a mini-muffin pan. Gently push a mini-peanut butter cup into the middle of each ball.
Bake at 375º for about 10-12 minutes. Cool and remove from pan.
