Oatmeal Peanut Butter Chocolate Chip Cookies

1/2 cup shortening
1/2 cup butter, softened
1 cup packed dark brown sugar
3/4 cup granulated sugar
1 cup peanut butter
2 eggs
1 1/4 cups all-purpose flour
1 1/4 cup quick-cooking oats
2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups semisweet chocolate chips

Preheat oven to 325ยบ.

In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt and oats; stir into the creamed mixture. Stir in chocolate chips. Drop by tablespoonfuls onto ungreased cookie sheets. Bake for 11 minutes in the preheated oven, or until just barely puffed and starting to turn light brown. Don't over-bake. Cool and store in an airtight container.

Yield: I usually get just shy of 48.
