This is one of our very favorite pizzas - simple and delicious. It tastes great with the just the onions and cheese and that's how we usually prepare it, but the pancetta is a nice change of pace and the saltiness contrasts nicely with the sweetness of the onions.

1 tablespoon olive oil
1 large red onion, sliced
salt and freshly ground black pepper to taste
1 teaspoon sugar
3/4 teaspoon dried thyme
red wine, sherry, madeira, whatever you have on hand
Fontina cheese, grated (to taste)
1/2 cup pancetta, chopped (optional)
pizza crust or whole wheat pizza crust
Heat oil in a large skillet over medium-low heat. Add onions; season with salt and pepper. Cook until onions begin to soften, about 15 minutes.
Reduce heat to low and add sugar and thyme. Continue cooking, stirring occasionally, until onions are very soft and caramelized, at least 30 minutes.
Add red wine as needed, when pan begins to get too dry.
