Peela Gobi

Indian-Spiced Roasted Cauliflower

Source: based on a recipe in Passionate Meals by Ismail Merchant

1 head of cauliflower, cut into bite-sized pieces
1/4-1/2 cup vegetable oil
4 garlic cloves, peeled and chopped
1 teaspoon turmeric
1 teaspoon salt, or to taste
1/2 teaspoon ground red pepper
1/2 teaspoon ground cumin seeds
1/2 teaspoon mustard seeds

Preheat oven to 400º.

In a small saucepan, heat oil and spices over medium heat for about 3-4 minutes, until garlic is fragrant and spices begin to blend into the oil.

Toss cauliflower with the oil and spices and then arrange in a single layer on a baking sheet. Bake at 400º for about 10 minutes, or desired degree of tenderness.
