Cooking Light - Jan/Feb 2007


The latest issue of Cooking Light arrived last week, and here's what caught my eye:

Main Course:

Well, that's it. I have the Cumin-Dusted Chicken Breasts and the Barley Risotto planned for this week and I will post as soon as we try them.

I only made 3 recipes from last month's issue so far, but I don't try to cook my way through an issue the way I did at one time, I cook based on whatever sounds good at the moment, what fits with what we already have on hand, and what fits our budget. Things that looked great at the time I made my list, may not grab my interest until sometime much later on, or I may never make it, no matter how good it sounds. What can I say, I'm fickle..........

    Fettuccini Alfredo became a standard for me. Now I will need to see what the difference is in this version.

    Hi Alysha! I just got my issue tonight and have a list made. I'll be editing it to categorize and add links later--right now my bed is calling!
    Some of the recipes caught both of our eyes--I'll be looking for any reviews you have.

    As I'm only cooking for one and am still adjusting to a tighter budget, I don't expect to get anywhere near through my list, but I'll give it a shot!

  3. Jennifer - I doubt that I've ever made all the recipes that catch my eye. Partly it's because some of the recipes are not things that I'd cook on a regular basis - like a cake. Still, it's nice to make a list and then be able to look back on it later.

    I hear you on the budget thing. I'm finding it very hard to keep to the budget I set up, even though I've cut out a lot of snacky stuff! It's a challenge!

  4. Anonymous - According to the magazine, the new version uses butter instead of margarine, 1% milk instead of FF and 1/3-less fat cream cheese instead of processed light cream cheese. Sounds good to me! I appreciate that they are going back and updating some old favorites to reflect cooking today.

    Well, I'm off to a good start! I made one recipe today--I'll review tomorrow or Saturday. I also realized I have ingredients to make at least 2 or 3 recipes.
    I'm about to start stocking my freezer! :)
