Oatmeal Peanut Butter and Banana Muffins

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 cup old-fashioned rolled oats
1/4 cup packed brown sugar (would increase to 1/2 cup or 3/4 cup next time)
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup peanut butter
1 cup milk
1 large egg
1 cup mashed bananas
1 tablespoon of oil (this is my addition and I would probably up this to 2 next time)
mix of sugar and cinnamon to sprinkle on top

In a large bowl, mix the flour and the oatmeal together, blend in brown sugar. Add baking powder and salt, mix again until well blended.

In another bowl (or in a blender or food processor if so desired) mix the peanut butter, milk, vanilla extract, egg and bananas. Mix well, then combine with dry ingredients, just until dry ingredients are moistened.

Fill muffin tins 2/3 full with batter. Sprinkle sugar and cinnamon on top. Bake at 400 degrees for 20 minutes
