Chewy Ginger & Spice Granola Bars
Source: loosely based on this recipe
1/4 cup brown sugar, packed
1/4 cup honey (would cut back a touch)
1 tablespoon molasses
1/4 cup butter (might cut back next time)
1/8 teaspoon ground cloves (would cut back a touch)
1/8 teaspoon ground ginger (would cut back a touch)
1/2 teaspoon ground cinnamon
1 1/2 cups granola or any granola of your choice
1 1/2 cups crisp rice cereal
1/2 cup currants or raisins
1/4 cup roasted almonds
1/4 cup crystallized ginger, chopped
Combine brown sugar, honey, molasses, and spices in a medium saucepan. Bring to a boil over medium heat. Lower hat and then simmer for 2 more minutes or until sugar is dissolved. Cool completely.
Meanwhile, combine the granola, rice cereal, raisins, almonds and ginger in a large bowl.
Stir brown sugar mixture into the granola mixture. Spread into a 9x13-inch pan. Refrigerate 2 hours.
