Spicy Sweet Potato Chips

1-2 tablespoons olive oil
1/2 teaspoon Penzeys Northwoods Seasoning
1/4 teaspoon chipotle powder
2 cloves garlic, minced
salt and pepper to taste
2-3 small sweet potatoes, sliced about 1/8-inch thick

Preheat oven to 450ยบ.

In a large bowl, combine olive oil and other seasonings. Add sweet potato slices and toss to coat. Arrange in a single layer on a baking sheet lined with parchment paper. Bake for about 15-20 minutes or until chips begin to brown.

Notes - Parchment paper works better than foil - the potatoes tend to stick to the foil, leaving behind the delicious outer layer behind on the foil! For best results, you can turn chips over halfway through the cooking time, but they work very nicely if you don't turn them.

    I can't wait to try this recipe. I've made sweet potato "french fries" but rarely because it's a pain to cut. This is a nice alternative.

    I made these sweet potatoes last week but didn't have the spice on hand. They tasted great anyway. If you have a pizza stone (or one of those stones by PamperChef) you can skip the parchment paper!
